165g Arley chicken
1 tbsp rapeseed oil
1 onion, peeled and sliced
1 red chilli, deseeded and chopped – increase or decrease the chilli to suit you
2cm piece of ginger, peeled and finely chopped
2 cloves garlic, peeled and crushed
2tbsp soy sauce
1 lime, finely grated rind and juice
2 tsp peanut butter
1 tbsp sweet chilli sauce
1 tsp brown sugar
50ml vegetable stock
300g pack mix stir fry vegetables
Handful of coriander, chopped
Rice or noodles to serve
Heat the oil in a frying pan or wok over a high heat and fry the Chicken Style Pieces for a couple of minutes, stirring.
Add the onion, chilli, ginger and garlic and stir fry for another 1-2 minutes.
Mix together the soy sauce, lime juice and rind, peanut butter, sweet chilli sauce and sugar and add to the pan with the vegetable stock and stir fry vegetables.
Stir fry for a further 4-5 minutes until piping hot.
Stir in the coriander and serve with noodles or rice.
Tip – replace the pack of stir fry vegetables with your own mix of vegetables eg cabbage, green beans, peppers, kale, carrots.
